Lobster and Crab Ravioli with a Tomato Basil Cream

Local Darien lump blue crab mixed with claw, knuckle and leg lobster meat that is seasoned with salt, pepper, old bay seasoning and fresh tarragon and bound with cream cheese. We sautée fresh spinach and diced tomatoes in garlic and olive oil, deglaze with sherry liqueur and add heavy cream. While the cream is reducing we heat the ravioli in boiling water and then add it to our sauce and then incorporate fresh basil and season the dish with salt and pepper. Topped with fresh grated Parmesan.

Served with fresh ginger, scallions, red peppers, onions, baby corn, water chestnuts and shredded carrots with a light brown Asian sauce and served over our homemade baked rice pilaf. 5.5g fat, 303 calories, 26g protein, 32g carbs, 1.5g sugars, 200mg sodium.
